Preheat oven to 180 degrees
Cooking time 1 hour
125mg organic butter
3/4 cup of unrefined sugar
2 free range eggs
1 teaspoon vanilla extract organic
250g gluten free flour or flour of your choice
1 teaspoon bicarbonate of soda organic
Pinch of Himalayan salt
3 tablespoons of milk organic or dairy free
3 large mashed bananas
1. Cream butter, gradually add in the sugar, the beaten eggs and vanilla essence.
2. Sieve the flour, bicarbonate of soda and salt.
3. Add dry ingredients alternatively with the milk and mashed bananas. I use a potato masher to do this.
4. Turn the mixture into a greased loaf pan approx. 23cm x 12cm
5. Bake for 1 hour.
A knife inserted should come out clean.
Slice when cool.
Delicious served plain or with butter.
May be sliced and frozen for an after school snack.
