raspberry chia pudding
Ingredients:
2 tbsp chia seeds
1 tbsp hemp seeds (I had never tried these before, they are yummy. I first used sunflower seeds)
1 tbsp coconut flakes ( I used desiccated coconut, as that was what I had in the pantry)
1 scoop Modere Protein powder or Modere Sync ( I added this as an extra boost - I use Modere as this is my preferred choice.)
1/2 cup of coconut milk
1 tsp honey or maple syrup
1/4 cup vanilla bean ( you could use vanilla extract but I have not added this and it still tastes divine)
1/2 cup of strawberries ( I have used raspberries or my own frozen berries and frozen cherries)

1. Mix all ingredients into a bowl, except the fruit.
2. Pour or spoon the mixture into a glass or small jar, either layering or topping with fruit.
3. Allow to set for 2 hours in the fridge.
I only allowed this to set for about 15 minutes as I am always on the go, but you could easily prepare it the night before.
I found this delicious and quite filling.
