Optional: 2 chicken breast fillets sliced in strips, gently cooked in olive oil and a splash of balsamic vinegar or 1 pack of best quality free range sausages cooked and thinly sliced.
Vegetarian or vegan friendly version:
1 cup of quinoa(raw) rinsed and then cooked as per package directions
125 grams of snow peas chopped
125 grams of cherry tomatoes chopped.

1/2 red onion finely chopped
1 clove of garlic chopped
1/2 cup basil leaves.chopped.
I have basil growing in my garden.
1/4 cup of extra virgin olive oil
1/4 cup of balsamic vinegar
Himalayan salt and freshly ground pepper.
1.Once quinoa is cooked and drained add to a large salad bowl.
2.Add vegetables (and cooked chicken or sausages), mix together and add dressing.
3.Toss to combine and serve.
