One of my favourite salads I like to make, especially around Christmas time.
2 tins of 4 bean mix, drained
2 cloves of garlic, finely chopped
1 red onion, finely chopped
1 bunch of coriander leaves, finely chopped
2 large truss tomatoes, chopped
1/4 teaspoon Himalayan salt
10 grinds of black pepper
3 tablespoons of olive oil
2 tablespoons of balsamic vinegar
Mix all the above ingredients together.
Can be made the day before and stored in the fridge.
